- 1 citrus thinly sliced
- ¾ cup sugar
- Cover the bottom of a thick-bottomed large pan with the sugar. Lay the slices of the citrus on the layer of sugar; don’t overlap them.
- Cover with a flat lid touching the orange (it minimizes oxidation and retain steam).
- Leave untouched over medium hit for around 10 minutes (stirring would cause crystallization) Flip and coat the other side. Cook until translucent.
- Spread out on a rack and leave to dry. Store in an airtight container.
