- 2 large potatoes, peeled and cut into strips/ or diced
- 1 cup olive oil
- Pour the oil in a thick-bottomed skillet. Add the potatoes to the unheated oil. Heat over a medium heat. Toss to coat completely.
- Cover with a lid. Stir occasionally. When the edges start being round turn down the heat to low. When beautifully tender uncover to slightly brown the potatoes.
- Drain and serve.
