Andalusian-style Calamari

  • 1 medium squid, cut into rings/strips
  • flour mixture: ½ cup wheat flour + ½ cup corn starch
  • salt and pepper to taste
  • 1 cup olive oil
  • 1 lemon cut into wedges (optional)


  1. Season the squid with salt and pepper. Shift the flour mixture over the squid to coat. Shake to remove any excess of flour.
  2. In a skillet heat the oil and deep fry the squid pieces in batches; until golden brown.
  3. Remove from the oil with a slotted spoon. Serve immediately.
