Candied Citrus (orange, lemon, lime, grapefruit ….)

  • 1 citrus thinly sliced
  • ¾ cup sugar


  1. Cover the bottom of a thick-bottomed large pan with the sugar. Lay the slices of the citrus on the layer of sugar; don’t overlap them.
  2. Cover with a flat lid touching the orange (it minimizes oxidation and retain steam).
  3. Leave untouched over medium hit for around 10 minutes (stirring would cause crystallization) Flip and coat the other side. Cook until translucent.
  4. Spread out on a rack and leave to dry. Store in an airtight container.
