Mushroom and Red Pepper Scramble

  • 500 g mushrooms, sliced
  • ½ onion, minced
  • 4 canned roasted red peppers, drained and chopped
  • 4 eggs, beaten with salt and pepper
  • 2 tablespoons olive oil


  1. Heat a skillet and pour in the oil. Sauté the onion.
  2. Add the mushrooms and continue to sauté. Add the red peppers and sauté slightly. Season with salt and pepper.
  3. Stir in the eggs.
