Camping Scrambled Eggs

  • 2 potatoes, peeled and cut into fine matchsticks
  • 2 medium onions, cut into thin strips
  • 100 g ham slices, cut into strips
  • 4 eggs, beaten
  • salt to taste
  • 1 cup olive oil (for frying)


  1. In a skillet heat the oil. Deep fry the potatoes along with the onion until golden. Drain and set aside.
  2. Leave very little oil in the skillet. Sauté the ham. Stir in the egg, fried potatoes and fried onion. Season to taste.
