Pressure Cooker Cheese Flan

  • 4 eggs
  • 2 cups fresh cheese (preferably goat cheese)
  • ½ cup condensed milk
  • 1 cup sugar
  • 2 teaspoons water


  1. Prepare the caramel heating the sugar with the water in the mold. Don’t stir as to the sugar not to crystallize. Set aside and let cool.
  2. Blend together the eggs, condensed milk and cheese.
  3. Pour this egg mixture into the caramel-coated mold. Cover with aluminum foil. Cook in a bain-marie in a pressure cooker for 5 minutes; or until a toothpick inserted in the middle comes out clean.
