- 500 g mushrooms, sliced
- ½ onion, minced
- 4 canned roasted red peppers, drained and chopped
- 4 eggs, beaten with salt and pepper
- 2 tablespoons olive oil
- Heat a skillet and pour in the oil. Sauté the onion.
- Add the mushrooms and continue to sauté. Add the red peppers and sauté slightly. Season with salt and pepper.
- Stir in the eggs.
